G reens are among my very favorite foods. Steamed, sautéed, raw—load up my plate and I’m happy. I guess it is an acquired taste, but to me a meal isn’t complete without plant food! I know that I’m in the minority. Despite recommendations to eat two to three cups of vegetables daily, only 1 in 10 adults actually consumes that amount, which is unfortunate because, calorie for calorie, vegetables provide the optimal source of nutrients among any food.
